Delicious zucchini Wakame fritter recipe

Zucchini Wakame Fritters

The dish that got my kids past the idea that seaweed is stinky and not for eating. These Wakame fritters are easy to make and delicious!

 

4 cups shredded zucchini

1 small handful dried Wakame blades

2/3 cup plain flour

2 beaten eggs

½ cup basil leaves

½ cup sliced spring onion

¼ tsp pepper

2 tablespoons oil (eg veg, olive, rice bran etc)

 

Pop the shredded zucchini in a colander and mix a teaspoon of salt through by hand. Let stand for 10 mins.

Place the Wakame in a bowl and add cold water. Let stand for 10 mins.

Add flour, beaten eggs, spring onion, basil and pepper to a large bowl.

Press the water out of the Wakame and roughly chop up. Add it to the bowl of ingredients.

 Press the moisture out of the zucchini and add it in the bowl too. Gently mix all the ingredients together by hand.

 Add oil to a large pan on medium heat and start adding the mixture in dollops (any size you like) to the pan when hot. Lightly press and cook until golden then turn. They usually take about 3 - 4 mins to cook through. Sprinkle some sea salt on top as desired.

 These are great served with sour cream, relish or chutney.
